Ingredients
- 1 head of cauliflower
- ½ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp Kosher salt
- ¾ cup water, ice cold
- ¾ cup Buffalo wing sauce
- ½ cup ranch dressing
- ½ cup of unsalted butter, melted
Directions
- Preheat the oven to 450°F, convection
- Whisk flour, cornstarch, baking powder, and salt together in a bowl. Add cold water until it is a smooth, thick batter. Let sit for 10 minutes
- Cut cauliflower into 2-inch florets
- Dip florets into the batter. Shake off excess batter and place on greased parchment paper on a baking tray
- Roast for 25-30 minutes
- Whisk together wing sauce and butter
- Toss hot cauliflower with sauce and garnish with 1-2 sliced scallions
